There is a tiny bit of time left to order Christmas, Chanukah and New Year's Eve Party Food and Catering.  Dates are filling up fast. So we recommend calling as soon as possible.

Recipe: Tiramisu Cake

Ingredients

• 2 packages of lady fingers (the cookie type, not the soft spongy type.)

• 2 cups mascarpone cheese. (* If you can't buy this - see note below).

• 1 1/4 cup heavy cream (chilled).

• 6 ounces dry Marsala wine (or to taste).

• 2 cups sugar.

• 1 teaspoon vanilla extract.

• 1 cup cocoa powder.

• 1 teaspoon ground cinnamon.
   

Ingredients for Espresso Mixture

• 1/4 cup heavy cream.

• 2 cups warm espresso or coffee.

• 3 tablespoons sugar.

• In a separate bowl, combine espresso, 3 T. sugar and ¼ cup heavy cream.

Directions

• In a mixing bowl, combine mascarpone with 2 cups of sugar, Marsala wine, 1 & 1/4 cup of heavy cream and vanilla extract.

• Whip combined ingredients until stiff peaks form. Then set aside.

• Quickly soak lady fingers in warm espresso mixture and transfer to layer bottom of 9-inch springform pan.

• With spatula or pastry comb, layer one inch of cream mixture over lady fingers evenly.

• Sprinkle cocoa powder over layer of cream.

• Form another layer with lady fingers followed by cream mixture.

• Sprinkle cinnamon and more cocoa powder to finish cake.

• When layering is complete, refrigerate cake for at least one hour before removing ring from pan.

• For decoration, line edges of cake with lady fingers and serve.

• Tie a red satin bowl around the whole cake to keep the lady fingers in place and to add a special holiday look.
   

* Emergency Marscapone: (if you can't find it in supermarket)

• 4 oz cream cheese.

• 4 oz. dry or drained dry Ricotta,

• Cream together before adding to the mixer.
